The Red Blazer was originally put on the map for its work in the area of environmental responsibility with an award from The New Hampshire Travel Council presenting the Red Blazer Restaurant with their Sustainable Business Award in 2008. In 2009 The Red Blazer was awarded the 2009 Champion of Industry Award from the NH Lodging and Restaurant Association. In 2011 the NH Department of Environmental Services Certified The Red Blazer as an Environmental Champion under a restaurant certification program. Since then the Red Blazer has continued to raise the bar and set the standard for environmental responsibility in our industry.
While many aspects of greening costs a lot of green we have always maintained it’s a responsibility that must be taken seriously especially with operations our size. The Red Blazer is one of Concord, New Hampshire's busiest hospitality properties. As a result, we consume a large amount of resources and generate a tremendous amount of waste. To combat this, we've put in place the best technologies available to reduce consumption of resources and purchase those with the least impact on the environment. We continue to purchase the most environmentally friendly products possible and constantly looking for the next best thing in pursuit of a more responsible way to do business by eliminate the use of chemicals when feasible, recycle and reuse everything we can, and look for newer and better ways to save energy. Before, during and after our remodel we have always pushed to implement the best technology available to reduce our electrical and gas demands. In recent years we have upgraded the entire facility to LED lighting inside and out. Any new refrigeration is upgraded to Energy Star and all heating and cooling systems are or will be transitioned to high efficiency units. We continue to source more and more of our products and do as much as we can on a local level and always look to see what are options are for advancing our sustainability efforts.
Restaurant Heating And Cooling Conservation Measures
Managing our heating and cooling needs is arguably one of our biggest expenses, not just from the number of systems but the sheer size of our operation. We have separate heating and cooling systems for the primary purpose of being able to control our individual restaurant areas. The Red Blazer is also equipped with air exchangers and economizers that effectively deliver outside air directly if the temperature allows. This eliminates the need to run compressors or limits their use.
During the coldest weather, management sometimes opts to close our Pub Entrance and escort guests in through our main entrance. Due to the positioning of the pub doors and the configuration of the pub dining area, the room's temperature may plummet when the doors are opened during cold windy weather. To ensure that our guests have a pleasant experience and that we are not wasteful with energy, we simply ask customers to use the main entrance during these times.
General Buying Practices and Sustainability Efforts
The Red Blazer makes great efforts to buy equipment and products that help reduce waste while supporting green technologies, green companies and a sustainable future. We make a conscious effort to buy local New Hampshire products when available and look for sustainable sources for purchasing goods and services locally. Buying local products is a responsible practice as it eliminates the need to transport goods from long distances. This is not always feasible, but it is our policy to look for these products and services and incorporate them into our buying program whenever possible.
We have already banned the use of Styrofoam products as well as other packaging materials made of non-biodegradable materials. We try not to buy any products that use dangerous chemicals in the manufacturing process. We also train staff to closely follow the instructions on our cleaning products and not use any of these products wastefully or in a fashion that is inconsistent with the product's use.
General Energy Conservation Measures
The Red Blazer Restaurant & Pub is fully equipped with cost-saving dimmable LED lighting. Our state-of-the-art lighting system also turns lights on and off based on customized programming. Automated sensors are also used in areas that do not need continuous lighting.
Equipment in our operation has been has been minimized over the years to maximize energy use and all new equipment must meet energy star guidelines and use modern refrigerants that help protect the environment. We are always looking for better ways to reduce the number of compressors and other large energy consuming devices.
Restaurant Water Usage
While The Red Blazer has done everything possible to minimize water usage through the use of the latest technologies and water-saving equipment. Our dishwashing system has the latest water and energy saving technology using less than half of the resources of the former machine.
Food and Beverage Waste Conservation
We understand the importance of providing a pleasant dining experience for our patrons. We believe that asking the right questions at the right time ensures helps us avoid food and beverage waste while minimizing any inconveniences customers may feel during their visit. We ask, for example, if a customer would like rolls brought to their table, instead of automatically bringing them.
Example; paying close attention to all the processes involved in the production of those simple rolls, including the growing and manufacturing processes, the energy needed to bake them, the butter that is served with them, the liner in the basket and all the dishes that will need to be washed whether they are consumed or not. We believe that we save valuable energy and resources by not wasting those rolls. The same thinking is employed when it comes to ketchup, coleslaw and any other items we offer. Environmental issues aside the wasting of good food is morally wrong.
